Manchester is welcoming a fresh new eatery, Wilderness Bar + Kitchen, opening in the Northern Quarter on Thursday 15 August.
Wilderness Bar + Kitchen is a brand new three-storey eating, drinking and lifestyle venue that will be opening in the Northern Quarter next month. Wilderness promises to bring a welcoming, relaxed vibe to the NQ, offering food and drink menus with a modern take on flavour, influenced by seasonality and the best available produce.
This will be the second site operated by the award-winning team of Dan Morris – previously of Cottonopolis and Trof Group; Mat Lake and Bart Murphy both of Junkyard Golf Club & Bunny Jacksons; and Lyndon Higginson from Liars Group, Junkyard & Bunny Jacksons. Higginson has designed and curated the artwork throughout the space.
Wilderness Bar + Kitchen comes on the heels of sister site Wilderness Record Store, Withington, with the store’s resident record buyer Mof Grimmers curating the music offerings for the NQ space, booking his favourite DJs and playing a range of new releases, classics and vinyl reissues.
The cooking at Wilderness takes style influences from modern European cuisine, using only the best produce of the season. The kitchen team is led by James Lord, who has worked at Manchester House and Australasia, who will use ingredients from the most forward-thinking producers to create unique and innovative dishes, cooked over hot coals.
The drinks menu will also mirror the seasons, along with a cocktail list that puts flavour first, using both traditional and modern techniques. Heading up the bar is Adam Day who has developed a natural menu, pairing house-made ingredients, seasonal produce and quality spirits. Wilderness Bar + Kitchen will also offer low ABV cocktails, natural wines and craft beers, carrying though its ethos of treating nature and its products with care and respect.
So far, it looks like the three-storey venue has a lot to offer. The ground floor is set to be an engaging, all-day space, taking bookings and walk-ins where guests can enjoy a carefully considered range of beers and house-made highball cocktails on tap.
The first floor cocktail bar will offer an intimate and unique drinking experience in which the bar takes centre stage. This super special space has been designed to break down the barriers between those behind the bar and the ones drinking there. There will also be a menu of seasonal small plates available to order.
The basement houses the Innovation Room, which will be a creative space for both the chefs and the bartenders to explore new flavours. The table is set within the working kitchen and can also be booked out for private dining, where guests can experience a tasting menu served by the Head Chef.
Wilderness Bar + Kitchen will officially open on 15 August, with regular hours from 11.30am until 12am Sunday – Wednesday, 1am on Thursday and until 2am Friday and Saturday. Food served 12pm – 10pm.
